In this shortcut version of the comfort food classic, fresh salsa from the refrigerator case stands in for chopped onions, tomatoes, and fresh herbs. Warm biscuits instead of doughy buns make this Joe well above average.
SERVES: 4
PREP TIME: 5 Minutes
COOK TIME: 15 Minutes
Ingredients

1 7.5-ounce tube refrigerated buttermilk biscuits
1 tablespoon olive oil
1 pound ground turkey (fresh or thawed)
Kosher salt and pepper
1 cup store-bought refrigerated fresh salsa

Directions
Step 1  Step 1:
Bake the biscuits according to the package directions. Let cool before slicing each biscuit in half.
 
Step 2  Step 2:
Meanwhile, heat the oil in a skillet over medium-high heat. Add the turkey and cook until no trace of pink remains, about 7 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
 
Step 3  Step 3:
Stir in the salsa and cook until heated through, about 2 minutes more.
 
Step 4  Step 4:
Place the bottom halves of the biscuits on a plate. Top with the meat mixture and sandwich with the remaining biscuit halves.
